We have been brewing since the fall of 1993. Despite all of Papazian's
"Relax have a homebrew", our first couple batches of brown ale were barely
drinkable. In Charlie's defense, it was our fault in that we used too much
bleach in the sanitation and didn't rinse thoroughly. Althought this sound
like it might kill you, it just creates very "off" beer.
Since then, we have been kicking ass. Except for one, all of our subsequent
brews have been quite good. Here are some explanations of brewing procedure,
brewing chemistry, and some recipes. We are also definetly looking for your
help too. There are plenty of spaces to send in comments, so please feel free
to give us any pointers.
